Physiological Processes and Postharvest Systems
Carlos is professor of the third-year course on Physiological Processes and Postharvest Systems. He holds a degree in Agronomic Engineering from the National University of Agriculture – UNAG (Honduras), a Master’s in Agro-industrial Production from the University of Chile, and a Ph.D. in Plant Production from the São Paulo State University (Brazil), both with an emphasis on postharvest physiology and technologies.
Before joining EARTH University, Carlos taught in Agronomic Engineering and Food Technology programs at UNAG, where he also served as Deputy Director of Research and Dean of the Faculty of Technological Sciences. He has contributed to academic and scientific training at universities in Honduras, Chile, Uruguay, and Brazil, advising and evaluating undergraduate and graduate theses. He is the author and co-author of international publications on the physiology, quality, and postharvest handling of whole and minimally processed fruits and vegetables.
Carlos’s approach combines applied science, talent development, and social commitment. He seeks to inspire in his students to develop a critical, creative, and problem-solving mindset, thus promoting the development of professionals capable of generating value across the entire agri-food chain. He firmly believes in the power of education to connect scientific innovation with the needs of the productive sector and sustainability.
