Carlos teaches post-harvest physiology to third year students and coordinates EARTH’s recently constructed model packing plant. His activities are focused on harvest and post-harvest issues. He has been an international consultant for the UNDP in Nicaragua. Prior to coming to EARTH, he was a professor in the department of biotechnology at the Universidad Autónoma Metropolitana in Mexico. He is a member of the Mexican Society for Horticultural Sciences (SMCH), the American Network for Post-Harvest Technology in Fruits and Horticulture (RITEP), and the Inter-american Society of Tropical Horticulture. He obtained his M.Sc. in Fruit Post-Harvest Physiology from the National School of Fruit Science in Mexico.
